Step-by-step cooking
Step 1:
Milk is heated in a microwave oven or on gas to a temperature of up to 30 degrees, but in no case should it be overheated, otherwise it will spoil the yeast. In a bowl, prepare the dough: pour in warm milk, add a tablespoon of flour, sugar, mix until smooth and leave in a warm place for 15 minutes. During this time, foam and bubbles will appear on the surface of the mixture, which means that the sponge is ready. Melt the butter, cool it to room temperature
Step 2:
We drive an egg into a bowl, add salt, beat it lightly with a fork. Add warm butter (only 80 g, we will need the rest to lubricate the tortillas). Then pour the sourdough into a bowl and mix lightly. Pour the sifted flour in parts. Knead the elastic dough, it should not be too tight and at the same time liquid. Cover the pan with the dough with a towel and put it in a warm place for 2 hours. When the dough rises, we grind it.
Step 3:
Repeat the procedure twice. And then we proceed to work with dough and cooking tortillas: on the ground surface we divide the dough into small pieces, each of which we roll out into a small tortilla according to the size of the frying pan in which they will be fried. We leave the tortillas for 15 minutes in a warm place to rise.
Step 4:
Pour a little vegetable oil into the pan and fry all the tortillas one at a time, until they are ruddy on both sides. These tortillas can be fried without oil in a non-stick frying pan, but in this case the tortillas will turn out pale and dry.
Step 5:
Remove the tortilla from the pan and immediately lubricate it with melted butter on both sides. If there is homemade butter, then the tortillas will be especially fragrant and soft. If the tortillas are not greased with oil, they will be dry and crispy.
Step 6:
We serve tortillas to the table, they are very tasty hot with cold milk. Tortillas can also be served as a substitute for hot bread, salads or soup. Bon appetit!
