Step 1:
Prepare the ingredients. To make an air omelet in a frying pan, we will need: 4 eggs; 2 tbsp milk; 1 tsp olive oil; ½ tsp salt and a pinch of ground pepper mixture.
Step 2:
Carefully separate the whites from the yolks. Not a drop of yolk should get into the whites, otherwise the whites will not climb. Put the proteins in the refrigerator.
Step 3:
Pour milk to the yolks, add the pepper mixture and beat lightly with a fork.
Step 4:
Beat the cooled whites with a mixer with a pinch of salt until an airy dense foam is obtained.
Step 5:
Brush a dry frying pan with olive oil. Pour the yolks on top and, tilting the pan, evenly distribute them over the entire surface. Fry the yolks over medium heat.
Step 6:
As soon as the yolks grab from the bottom, put the whipped whites on top, carefully leveling so that they do not get out of the egg pancake.
Step 7:
Cover the pan with a lid and cook on low heat for 5-8 minutes. During this time, the protein should thicken. If you press it with your finger, it will spring up and will not stick to your hand.
Step 8:
Transfer the omelet to a platter.
Step 9:
Cut in half and fold the protein side inside. Cut the omelet into portions and serve. Enjoy your meal!
I have prepared many different omelets, but I can say with confidence that this one is a real gem in my collection. And until recently, I didn't know anything about it, I never even came across a single picture on the Internet (which is strange, because there are a lot of fans of this omelet). Otherwise, I would have prepared this aerial miracle much earlier.
Such an omelet is easy to prepare, it will turn out the first time - the main thing is to beat the proteins well. They should be whipped into a very dense foam. This is the whole secret of success. It happens that the yolks are whipped on top, and the liquid protein remains unbroken at the bottom. This is what you need to avoid and make sure that everything is whipped evenly. Otherwise, there should be no problems.
