Tsybulniki (Ukrainian Onion Fritters)

A great match for a bowl of soup, made from ingredients you always have on hand! As you may have guessed from the name, tsybulniki are a Ukrainian dish — think of them as lazy little onion fritters. They're perfect alongside a first course, but they're also delicious on their own, straight from the pan with a dollop of sour cream. And they couldn't be easier to make!

    It really matters that you chop it by hand rather than buzzing it in a blender — the fritters taste much better this way.

    Stir well — you can even scrunch the onion with your hands a bit to help it release its juices. I skipped that step and the onion gave up plenty of juice anyway. Let it sit and macerate for 10 minutes.

    Meanwhile, crack 3 eggs into a bowl.

    And beat them lightly.

    Once the onion has macerated, stir it into the eggs.

    Stir the baking powder into the flour.

    Sift the flour and baking powder into the bowl with the onion and eggs — sifting adds air, so the tsybulniki come out light and fluffy.

    Fry the tsybulniki in a preheated, oiled skillet until golden. They cook fast — just 2 to 3 minutes per side.
