Sweet-and-Sour Pork with Pineapple
Tender, juicy meat in a sweet-and-sour sauce — an absolute keeper. I stumbled on the recipe online and just couldn't scroll past it. I knew pork and pineapple were a natural pair, but I never expected it to turn out this good. And, as always, it's about as easy as it gets.

Step 1:
Gather your ingredients.

Rinse the pork well, pat it dry with a paper towel, and cut it into bite-size pieces.

Add the cornstarch — potato or corn starch, either one works.

Step 4:
Toss to coat well — the meat should be completely dry, which is important.

Step 5:
Sear the pork in a well-heated skillet with the vegetable oil for 3 to 5 minutes.

Step 6:
In a separate pan, pour in the juice from the canned pineapple and add the tomato sauce or a good ketchup — or, in a pinch, 1 tablespoon of tomato paste.

Pour in the soy sauce.

Bring to a boil and let it simmer for 2 minutes.

Add the seared pork to the pan and simmer over medium heat, covered, for 10 minutes — the sauce will thicken up a bit in that time.

Add the canned pineapple and warm through, covered, for another 5 minutes — the pineapple soaks up the sauce and turns tender.

And the dish is ready.

To serve, coarsely chop some parsley or green onion.
