Sweet-and-Sour Pork with Pineapple

Wonderfully tasty braised pork with chunks of pineapple. This pork comes together quickly — even faster than a simple goulash. Tomato and soy sauce with pineapple syrup build a rich new flavor that pairs beautifully with the meat. Pork like this, studded with pineapple, is a great main for a special dinner served over boiled potatoes.

  • The right pan makes a difference — a poor choice can spoil even the best recipe, so pick one suited to what you're cooking.
  • Every oil is good only up to a certain temperature — its smoke point, past which it starts to burn and form harmful compounds. Choose an oil with a high smoke point for frying.
  • Remember that soy sauce is quite salty. Cut back on the added salt so you don't overdo it.
