Step-by-step cooking

Cooking time: 1 h 10 min
  1. Step 1:

    Step 1.

How to make cutlets in sour cream sauce in the oven? First, prepare the necessary ingredients according to the list. Choose minced meat according to your taste. It can be minced meat from a certain type of meat, for example, only pork or beef (like mine) or mixed.

  2. Step 2:

    Step 2.

Cut off the crusts from a slice of white bread, fill the crumb with milk and leave to swell.

  3. Step 3:

    Step 3.

    Chop the dill finely.

  4. Step 4:

    Step 4.

In a bowl, combine the minced meat, egg, a slice of bread squeezed from milk, garlic, dill, salt and pepper. If desired, you can add a pre-chopped and finely chopped small onion to the minced meat in a fresh or pan-fried form.

  5. Step 5:

    Step 5.

Mix the minced meat until smooth. If the minced meat turns out to be too runny, pour 1-2 tablespoons of semolina, mix and leave for 15 minutes for the cereal to swell. Semolina will absorb excess moisture, and the stuffing will become more viscous.

  6. Step 6:

    Step 6.

With wet hands, form small round cutlets from minced meat.

  7. Step 7:

    Step 7.

Heat a little vegetable oil in a frying pan and fry the meatballs over medium heat for about 5 minutes until golden brown. In the process of roasting, turn the cutlets to the other side. If you don't want to waste time roasting or you need a more dietary option, you can put them in a mold raw, pour the sauce and bake in the oven for about 40-45 minutes. However, with roasting, the cutlets turn out tastier.

  8. Step 8:

    Step 8.

While the cutlets are being fried, prepare the sauce. You can use any broth: chicken, meat or vegetable. If there is no broth, you can replace it with ordinary water.

  9. Step 9:

    Step 9.

In 50 ml of cold meat broth, dilute the starch so that there are no lumps.

  10. Step 10:

    Step 10.

Pour the broth with starch into the sour cream and stir well.

  11. Step 11:

    Step 11.

Pour in the remaining meat broth, season the sauce with salt and pepper to taste and mix well.

  12. Step 12:

    Step 12.

My sauce turned out to be quite liquid, but when baking it will become much thicker thanks to starch. You can adjust the amount of sauce to suit your tastes. If you want the cutlets to be completely covered with sauce, do 1.5 times more. I needed the sauce to reach about the middle of the cutlets.

  13. Step 13:

    Step 13.

Transfer the meat patties to a greased baking dish.

  14. Step 14:

    Step 14.

Pour the sour cream sauce into the mold. Put the cutlets in a preheated 180 ° C oven and bake for about 20-25 minutes. Depending on the size of the cutlets and the characteristics of your oven, you may need more or less time. Cutlets in the oven with sour cream gravy are ready. Bon appetit!
