- Add the sugar and eggs to a deep bowl. Beat until the sugar has fully dissolved and the mixture roughly triples in volume. Add all the sour cream (thick homemade sour cream is best, or choose the highest-fat option at the store), along with the baking powder, baking soda, and salt. For a lovely aroma, add the vanilla sugar (or use vanilla extract). Mix everything together well, then start adding the flour a little at a time. Be sure to sift the flour — a sifter-cup makes it easy, or sift it into a bowl ahead of time before adding it. Don't skip the sifting; it makes the finished doughnuts noticeably softer and airier. Knead the dough. Keep in mind you may need a bit more or less flour than the recipe calls for, since the exact amount depends on the flour's gluten, the thickness of the sour cream, the size of the eggs, and more — so go by the consistency of the dough rather than the number. At first the dough may feel quite sticky, but after a short rest it will firm up and shape easily. Pour vegetable oil into a heavy-bottomed pot to a depth of about 1½–2 inches (4–5 cm). Shape the doughnuts by rolling balls with oiled hands, or use two tablespoons to scoop them. Fry for 4–5 minutes, until golden brown all over. Stir constantly so they don't stick to each other or to the bottom and sides of the pot. Transfer the finished doughnuts to paper towels to drain off the excess oil.
