Skillet Lazy Cabbage Rolls with Rice — No Cabbage

A quick, easy take on a hearty dinner. Running out of cabbage is no reason to skip these tasty lazy cabbage rolls. This version also works if you're on a restricted diet and can't eat cabbage for any reason.

  • Lazy cabbage rolls are much simpler to make than the traditional kind — even a beginner can handle them. Let's get started on skillet lazy cabbage rolls with rice and no cabbage. First, rinse the rice several times until the water runs clear. You'll need 4 tablespoons. Cover the rice with boiling water and wrap the bowl in a towel — no need to actually boil it. By the time you've prepped the other ingredients (about 15 minutes), the rice will be ready. Then drain off any excess liquid. This way the rice stays fluffy and turns out half-cooked; boiling it risks turning it to mush. Grind the meat into ground pork. I used all pork, but these are even tastier made with equal parts pork and beef. Sometimes I even add a little ground chicken breast. Take one large onion, peel it, and finely chop it. Add it to a skillet to fry in vegetable oil. Wash, peel, and coarsely grate one large or two small carrots. Add the grated carrot to the onion and fry for a couple of minutes. Combine the ground meat, rice, and sautéed vegetables. Season with salt and spices (khmeli-suneli) and mix well. You can add a raw egg if you like, but the rolls hold their shape perfectly without one. With hands moistened in cold water, shape the mixture into oblong patties. Start frying them in vegetable oil, two to three minutes per side. While they brown, make the sauce: whisk 2 tablespoons each of sour cream and tomato paste with 1 cup of water and salt to taste. For a smooth sauce, you can use an immersion blender. Pour the tomato–sour cream sauce over the rolls, add a bay leaf, and simmer for 10 minutes. Serve the finished lazy cabbage rolls sprinkled with fresh chopped herbs. Enjoy!
