The advantage of the dish is that it is prepared from products that are always at hand. It seems to be the most familiar potatoes, eggs, milk (cream), and combine them together, following the steps of the recipe, and we get a traditional Spanish dish. Cooking it is extremely simple!

First of all, I wash the potatoes under running water, after which we peel them. Cut the potatoes into small thin pieces, literally 3 mm thick. You can cut a little larger cubes (with a side of about a centimeter or a little more). To begin with, it is advisable to cut large potatoes in half or into quarters. We put the potato pieces into a deep bowl, pour salt water so that the potatoes do not darken.

Peel the onion, then cut the bulbs in half and finely chop each half. Transfer to a small bowl and set the onion aside for now.

We put a large frying pan, preferably cast iron, on medium heat. An important point is that the frying pan should be with a removable handle so that you can put it in the oven later. Pour half of the vegetable oil into the pan, heat it up, and then spread the onion and, with constant stirring, cook it for about 8 minutes - until soft and light golden.

Drain the water from the potatoes, dry them with a slightly clean towel, put them in a clean bowl, pour the remaining oil, pour salt and ground black pepper. Mix everything thoroughly. Next, put the potatoes in the frying pan to the onion. Cover the pan with a lid, cook it, stirring from time to time, until ready (soft).

Break eggs into a bowl, pour cream (milk), pour a little salt and ground black pepper. Beat the egg mixture with a whisk until fluffy. Pour the resulting mixture over the potatoes. Pre-washed and dried greens (it can be parsley or cilantro, dill is also suitable) finely chop and sprinkle it with the future frittata.

Cook the frittata on low heat until the eggs are almost completely solidified. In terms of time, it will take 5-8 minutes. It is important to make sure that the frittata from below does not burn. Next, put the frying pan with frittata in the oven preheated to 200 degrees for a few minutes, until it becomes ruddy and crispy. If you don't want to turn on the oven, you can gently flip the frittata onto a large flat plate, and then back into the pan so that the frittata is fried on the top side too.

The frittata is ready. Serve it on the table hot, cut into portions like a cake.
