Break the chicken eggs into a large bowl or other container in which it would be convenient to stir the dough. Add sugar to your liking and a little vanilla for a pleasant aroma. Then, with a mixer at minimum power, beat the eggs just to mix the ingredients.
Next, you will need kefir to make pancakes according to this recipe. You can take it of any fat content - it doesn't matter for pancakes. They are equally tasty and thin with the use of 1 percent kefir or higher fat content. Pour kefir into a bowl with already beaten eggs and sugar and mix again with a mixer at a slow speed.
Sift wheat flour separately and add a pinch of fine salt to it. It is necessary to sift the flour in order to get rid of possible impurities and break all the lumps. Then transfer the sifted flour in a few rounds to a bowl with eggs and kefir. And again, using a mixer, mix the resulting mass - it should turn out to be of a homogeneous consistency, without any inclusions and lumps.
The last step in the preparation of pancake batter is the addition of vegetable oil to it. This is necessary so that the pancakes do not stick to the bottom of the pan and they can be easily turned over.
Now that the dough is ready, you can start baking pancakes directly. To do this, put the pancake pan on the stove. If there is no pancake pan, then this is not a reason not to bake pancakes at all. You can take any frying pan with a long handle. The main thing is that it is not too heavy.
Heat the frying pan on the stove to the desired temperature. Then, using a ladle, pour a portion of pancake batter on it and distribute it over the entire surface, shaking the pan from side to side. You need to bake pancakes at maximum temperature. As soon as the pancake becomes bubbling, gently prying with a spatula, turn it over to the other side. Thus, fry all the pancakes to a beautiful ruddy color until all the dough is finished.
These pancakes are usually served immediately on the table while they are still hot.
