Oven-Baked Chelogach (Beer-Marinated Pork Ribs)

Incredibly tasty bone-in meat, baked in the oven! This tender, juicy, fragrant baked pork pairs great with both beer and stronger drinks, and it goes with any side dish. Everyone falls for it from the very first whiff! (Chelogach is a rustic dish of meaty pork ribs marinated in dark beer, then seared and roasted.)

    1. Season each bone-in piece of pork with salt and your favorite dry spices. Rub the spices and salt into the meat with your hands, then place it in an appropriately sized container — ideally not plastic. 2. Pour the beer over the meat and let it marinate for 2–3 hours. 3. Heat the vegetable oil in a skillet and sear the pieces on both sides until golden brown (about 5 minutes per side). 4. Grease a baking dish with the butter and lay the seared meat in it. 5. Put the dish in an oven preheated to 350°F (180°C) and bake the meat for 1 hour. The chelogach is ready! Serve it with any sides, vegetables, or favorite sauces. Enjoy!
