Lazy Meat Brizoli (Egg-Crêpe Roll-Ups)
A tasty, satisfying appetizer wrapped in egg crêpes. These roll-ups are filled with meat and cheese, and they make a wonderful addition to any party spread. Sliced, they look bright and festive on the plate — and everyone loves them, no exceptions. Give them a try!

Step 1:
For the lazy brizoli, start with the filling. Put the ground meat in a roomy bowl. Peel the onion and chop it finely with a sharp knife, then add it to the meat.

Add the cheese, grated on the medium holes of a box grater. Season with salt and your spices to taste.

Mix the filling until it's well combined and smooth, then divide it into 5 equal portions right in the bowl.

In another bowl, whisk the eggs with the milk and a little salt just until blended. This much egg batter is exactly enough for 5 crêpes.

Add a little oil to a hot skillet and pour in a ladleful of the egg batter. Over medium heat, cook each crêpe on one side until lightly golden.

Slide the crêpe onto a plate, spread a portion of the meat filling evenly over the surface, and roll it up.

Grease a baking sheet with oil and arrange all the rolls on it. Bake in an oven preheated to 350°F (180°C) for 30 minutes. Slice the finished rolls into pieces and serve as an appetizer. Enjoy!
