- A slow cooker is one of the best ways to make split pea porridge. Dried peas need long soaking and cooking, and getting them soft and creamy the usual way can be tricky. The slow cooker does the work for you: with the lid on, the peas reach just the right tenderness with almost no attention. Rinse the peas well under running water until it runs clear. They must be soaked before cooking, and you can do this right in the slow cooker insert to save on extra dishes. Add the rinsed peas to the cooker and cover with cold water so they're fully submerged. After 2 hours, drain the peas in a colander. Return them to the insert and cover with fresh cold water. Put the lid on, set the cooker to a 2-hour cook, and go about your day. About 30 minutes before the end, dice the smoked pork belly small, add it to the cooker, stir, cover, and keep cooking for the remaining 30 minutes. Cut up the smoked chicken — any part works, though fillet, thighs, or legs are best. Remove the skin, take the meat off the bone, and dice it. Add the smoked chicken as soon as the cook cycle ends, and season with salt and ground black pepper at the same time. Stir, cover, and switch to the keep-warm setting for another 5 minutes. The porridge is now ready to serve. If you're not eating right away, just leave it on keep-warm and it'll be waiting hot whenever you want it. Serve with a pat of butter and a sprig of parsley on top. Enjoy!
