Skillet Moose Goulash
This goulash can feed the whole family! Moose goulash isn't nearly as tricky to make as you might think, and the flavor is downright finger-licking good. If you don't have moose, venison or another lean game meat works just as well.

- Rinse the moose meat, pat it dry, and cut it into cubes. Finely chop the onion. Heat a little oil in a deep skillet and sear the moose meat over high heat for about 5 minutes. Add the onion and cook over medium heat, stirring now and then, for 5–7 minutes. Sprinkle the goulash with salt, pepper, and flour, stir, and cook (stirring occasionally) for 2–3 minutes. Stir in the tomato paste until well combined, then pour in 2–3 cups of water or beef broth, stir again, drop in the bay leaf, cover, and simmer over low heat for 1 to 1½ hours — lean game meat needs that slow, gentle cooking to turn tender. When the moose goulash is done, sprinkle it with chopped fresh herbs.
