Horsemeat Cutlets

These unusual cutlets will win you over! Horsemeat cutlets are a terrific dish — horsemeat is packed with protein and has very few carbs, which is rare indeed. Be sure to use young meat, since older horsemeat has an off smell and a tougher texture.

  • How do you make horsemeat cutlets?
    1. Wash the meat, cut it into rough pieces, put it in a bowl, cover with water, and let it soak for 2 hours.
    1. Peel the garlic and cut the fatback into pieces.
    1. Grind the horsemeat, garlic, and fatback together in a meat grinder.
    1. Put the bread in a bowl and pour the milk over it. Peel the onion and cut it into small dice. Add the soaked bread and the onion to the ground meat and mix.
    1. Season the mixture with cumin and ground black pepper, salt to taste, and mix thoroughly.
    1. With wet hands, shape small cutlets and coat them in breadcrumbs.
    1. Pour vegetable oil into a skillet and set it over the heat. Add the cutlets and fry about 5–7 minutes over medium heat, then flip them, cover the pan, and cook another 7–10 minutes over low heat.
  • Serve the cutlets with any side dish or with vegetables.
