Cutlets from fresh herring turn out very tasty and juicy, an excellent variety of fish table.
1. Defrost the herring, gut it, cut it into fillets.
2. Grind in a combine or in a meat grinder, adding onions.
3. Add egg and potato starch to the minced meat. Knead the minced meat well, add salt and pepper. You can add your favorite spices.
4. Form minced cutlets, roll them in breadcrumbs.
5. Heat the oil. Fry the cutlets in oil on both sides, cover with a lid and, adding a little water, steam the cutlets under the lid - this will allow the starch to swell, and the cutlets will turn out lush and airy.
It is best served with a side dish of mashed potatoes, vegetables and herbs.
