- Here's a wonderfully unusual recipe worth trying. Prosciutto pouches stuffed with fresh mozzarella and tomatoes make a dish that dresses up any table and is sure to surprise your guests. The star ingredient is prosciutto — a dry-cured Italian ham. First, toast the pine nuts in a dry skillet for about 10 minutes, until they turn a lovely golden color and smell fragrant. Next, prepare the tomatoes: drop them into boiling salted water and blanch briefly, about 30 seconds. Fish them out, peel off the skins, cut each into quarters, and remove the seeds. Let the tomatoes drain and set the pieces in a separate bowl. Set aside about a tablespoon each of nuts and olives to garnish the finished dish later. Now make the filling: to the tomatoes, add the small pieces of mozzarella, the remaining nuts and olives, the basil, a drizzle of olive oil, and a good amount of salt and pepper. Mix it all together and the filling is ready. Lay one strip of prosciutto on a board and a second strip crosswise on top. Place a mound of filling in the center and fold the ends of the ham up around it to form a little pouch. To hold it closed, tie it at the top with a stalk of green onion — you'll need as many onion stalks as you have slices of prosciutto. In Italy these little pouches are called fagottini. Now plate the dish: arrange the fresh lettuce leaves on a platter, set the fagottini on top, scatter with the reserved olives and nuts, and finish with a drizzle of olive oil and a sprinkle of pepper. That's it — bring it to the table. You can be pretty sure your family and guests have never seen a dish quite like this, unless they've been to Italy.
