Pork and Mushroom Julienne
Pork and mushroom julienne makes a great lunch! This recipe is handily made in two stages. First you cook down the pork and mushrooms in a béchamel sauce — a base you can keep in the fridge for 2-3 days. Then, right before serving, you bake that base topped with grated cheese. This julienne is perfect for a romantic dinner or a small birthday gathering: it's an individual-portion dish, cooked and served in single-serving cocottes or ramekins.

- Pork and mushroom julienne is a delicious, hearty dish. This style of julienne isn't really French — it's more of a Russian take on the idea. Even so, the recipe is out there and it works beautifully. Let's take a closer look! 1. Gather the ingredients from the list. Lean pork works best. 2. Cut the onion into small dice and sauté in hot butter until translucent. 3. Add the finely chopped mushrooms and cook down a bit until the liquid evaporates. 4. Cut the pork into small cubes and sear it quickly along with the mushrooms. You could brown everything separately and then combine it in the baking dishes, but I'm suggesting the quicker way. 5. Sprinkle the contents of the pan with a thin layer of flour and stir it in off the heat — that makes it easier to avoid lumps. 6. Add the milk, stir until smooth, and return the pan to the stove. Bring to a boil and simmer in the sauce over low heat for about 5 minutes. This base keeps in the fridge for several days and bakes up right before serving, which is wonderfully convenient. 7. Divide the mixture among the ramekins, top with grated cheese (Parmesan is ideal), and bake at 350-400°F (180-200°C) for about 20 minutes. And that's it! Pork and mushroom julienne is ready — enjoy!
