Step 1:
Prepare the ingredients. To cook pork with potatoes in the oven, we will need: pork tenderloin, lemon, olive oil, herbs of Provence, ground black pepper, ground chili, and salt.

Tenderloin is a short oblong-rounded, completely separate muscle located from the inside of the pork carcass, which does not have its own bones, but only attached to the thoracic and lumbar vertebrae. There are two tenderloins in each pork carcass. Internal fat layers, connective tissue are completely absent.
The top of the tenderloin is partially covered with a thin silver membrane of connective tissue, which must be removed before cooking. With any culinary processing, this membrane does not break down, remains solid, it is impossible to chew it. Therefore, it is better to cut it in advance.
The tenderloin is considered a laconic part of the pork section, so it is more expensive than the same ham.
