- Start with the tartlet shells themselves. You can make them yourself or buy them ready-made; you'll want shortcrust (shortbread) shells. Preheat the oven to 350°F (180°C). Now make the filling for this tasty appetizer. Cut the ham into small cubes. Use any cheese you like, but a hard variety works best since it's easier to cut into small cubes. Next, prepare the mushrooms—they give the finished tartlets a savory, woodsy flavor and an appetizing aroma. Rinse a small handful of white mushrooms under running water and pat them dry with paper towels. Set them on a cutting board and slice thinly. Pour a little olive oil into a skillet and fry the mushrooms over medium heat until lightly golden. Transfer them to a paper-towel-lined plate to soak up the excess oil. In a separate bowl, combine all the prepared filling ingredients—the diced hard cheese, ham, and the fried mushrooms. Spoon the filling evenly into the tartlet shells. In a small bowl, lightly beat the cream with a whisk or fork and season with salt to taste. How much salt you need depends on the type of cheese and ham you use; if the filling is already salty, add just a little. Arrange the filled tartlets on a baking sheet and pour the beaten cream over the top of each one. Bake in the preheated oven for about 15 minutes, or a little longer, until the tartlets are golden. Garnish the finished baked tartlets with fresh parsley. Enjoy!
