Chinese-Style Meat and Eggplant

A surprisingly delicious dish with Chinese flair! These meat-and-eggplant fritters can be served warm or cold. They're wonderful with a range of dipping sauces and some fresh vegetables on the side.

    1. Put the ground meat in a bowl, add the soy sauce and sesame oil along with a little salt, pepper, and garlic powder, and mix thoroughly.
    1. Wash the eggplant, slice it into rounds, place them in a bowl, sprinkle with salt, and let sit for 10 minutes.
    1. Crack the egg into a small bowl, add a splash of water, and beat with a fork. Spread the flour on a flat plate.
    1. Spoon some of the meat mixture onto one eggplant round, top with a second round, and press the edges gently with your fingers. Dip each "sandwich" into the egg batter, then dredge it in flour.
    1. Fry the eggplant fritters in vegetable oil for about 5 minutes per side, then set them on a paper towel to blot off the excess oil.
  • Serve garnished with fresh parsley.
