Beef Goulash with Prunes
A fragrant beef goulash with prunes. I've loved braised and pan-fried beef with all kinds of sauces and gravies since I was a kid, and goulash fits the bill perfectly—tender meat and a rich sauce all in one. Serve it over pasta, rice, or mashed potatoes.

Step 1:
Gather your ingredients.

Soak the prunes in cold water for 20 minutes.

Rinse the beef, pat it dry, and cut it into large chunks.

Step 4:
Brown the beef in a deep skillet with the vegetable oil, cooking until all the liquid has evaporated and the meat is golden.

In a separate pan, toast the flour until lightly golden.

Step 6:
Stir the sour cream and 1 cup (250 ml) of water into the toasted flour. Stirring, bring the sauce to a simmer over low heat.

At the end, stir in the ground black pepper and cinnamon.

Step 8:
Pour the sauce into the skillet with the meat and stir to combine.

Step 9:
Pour in the remaining water, stir until smooth, bring to a boil, and simmer over low heat for 30–35 minutes.

Step 10:
About 10 minutes before it's done, once the liquid has reduced by half, add the prunes. It's best to salt the dish right at the end.
