Cheesy Potato Pancakes (Draniki) with Onion

A dish that feels special but works any day of the week! These cheesy potato pancakes (draniki) are perfect for a big family dinner or lunch. Hot off the skillet, they go beautifully with fresh sour cream or any sour cream–based sauce. Tomato sauce, ketchup, or mushroom gravy work great too. Round it out with fresh vegetables, a crisp salad, and some fresh herbs.

    For cheesy potato pancakes you'll need raw potatoes (the weight is given peeled), hard cheese, onion, full-fat sour cream, all-purpose flour, salt, and ground black pepper.

    Grate the potatoes. Coarse holes give you pancakes with more texture and body; fine holes make them smoother and more delicate. Here the potatoes are grated on the coarse holes. Stir in the sour cream right after grating — that keeps the potatoes from darkening as much.

    Peel the onion and chop it as fine as you can. Alternatively, grate it on the fine holes or purée it in a blender.

    Grate the hard cheese on the fine holes and add it to the bowl. Add the flour, salt, and ground black pepper, and mix the potato-and-cheese batter thoroughly until it's as smooth and even as possible.

    You can do this with a tablespoon, but mixing with your hands works better — the potato gets perfectly blended with the flour, salt, and cheese.

    The batter is ready! All that's left is to fry the pancakes. Heat the vegetable oil in a skillet until good and hot, spoon in the batter, and flatten each one gently into a round pancake. Fry for 2–3 minutes per side until golden brown.
