Step 1:
How to cook dorado on charcoal on the grill? Prepare the fish first. It's great if you have fresh dorado, but you can also use it from freezing. If you have frozen fish, then take it out of the freezer in advance and leave it at room temperature until it is completely defrosted. Clean the carcasses of scales, remove the insides and gills. Rinse the fish and dry it with napkins to get rid of excess moisture.
Step 2:
In a small deep container, add vegetable refined oil (or olive oil), soy sauce, pepper mixture, dry spices and salt to taste. Mix everything thoroughly until smooth. Which spices are better to use? You can take a ready-made mixture for fish dishes or dry herbs to taste.
Step 3:
Send the marinade to the fish. Soak each carcass with marinade with massaging movements and leave in this way for 15 -30 minutes. If you leave the fish to marinate for a longer time, then wrap it with cling film or send it in a cellophane bag, and then put it in the refrigerator.
Step 4:
When the dorado is marinated, you can light the grill. Smooth out the remaining coals after the flame with an even layer.
Step 5:
Grease a clean dry grate with vegetable oil. This is done so that the fish does not stick to the metal during the baking process. Place the dorado on the grill and cook until the skins are browned. I usually cook various vegetables in parallel, if space on the grill allows. This time there was green asparagus available.
Step 6:
Flip the dorado to the other side and bring it to readiness.
Step 7:
Done, serve with baked or fresh vegetables. It is delicious both hot and cold.
Usually it does not take much time and effort to cook fish on the grill. The cooking time depends on many factors: the size of the dorado, the degree of heat and the amount of coals, and even on the model of the grill.
You can check the readiness of the fish with a fork or the tip of a knife. Pierce the dorado's back and see if the juice inside is transparent, then the fish is ready.
Do not keep the dorado on the grill for too long, otherwise it will turn out dry.

If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt is already present in such mixtures, take this into account, otherwise you risk over-salting the dish.

If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
When adding soy sauce to a dish, it is worth considering that it has a rather salty taste. Reduce the total amount of salt, otherwise you risk over-salting.
