Step-by-step cooking
Step 1:
Prepare the ingredients according to the list. We cut off the crusts from the pieces of bread, freeze them in the freezer, we will need them for breading. A piece of butter also needs to be frozen in the freezer. Cut the bread crumb into pieces and pour milk or cream, let them soak.
Step 2:
Chicken fillet is washed, dried and cut into cubes. If there is no blender, you can twist the meat in a meat grinder or finely chop it with a knife. If there is no time, then you can use ready-made minced chicken.
Step 3:
Chop the meat with a blender to the state of minced meat.
Step 4:
Peel the onion and finely chop it with a knife. We pass onions in butter melted in a frying pan, you do not need to fry the onion for a long time, it should become soft and transparent, but not browned.
Step 5:
Rub frozen butter on a grater. Add the cooked ingredients to the minced chicken in the blender bowl.
Step 6:
Put the minced meat in a bowl with bread. Add salt and ground black pepper to taste. Mix it up. To make minced meat of the desired consistency, it is better to knead it like dough with your hands. Then we collect the minced meat into a lump and hit the work surface several times, the minced meat needs to be beaten off so that the cutlets turn out soft and lush.
Step 7:
Frozen bread crusts are grated or crushed with a coffee grinder. With our hands soaked in cold water, we form small pieces of minced meat and roll them from all sides in breadcrumbs.
Step 8:
Melt a piece of butter in a frying pan, fry the cutlets on it on both sides until browned.
Step 9:
Then we transfer the cutlets to a baking dish (I have a universal frying pan with a removable handle, in which you can not only fry, but also bake in the oven) and send them to a preheated 180 degrees for 10 minutes. Juicy, delicious and fragrant cutlets are ready. We serve them to the table with any side dish to taste or without it. Perfectly this dish will complement mashed potatoes. Bon appetit!
