Deruny — Ukrainian Potato Pancakes with Egg Yolks
A Ukrainian dish that takes care of hunger in a hurry! "Deruny" is the Ukrainian name for potato pancakes. They're a tasty, filling dish loved in many households. There are countless ways to make them, each differing in small details. Deruny are traditionally served with sour cream — homemade is best. They also pair wonderfully with a vegetable salad, fresh herbs, and all sorts of sauces.

Step 1:
First, prep the vegetables: wash and peel the potatoes, peel the onion, and rinse it under cold water. Afterward, you can blot both the potatoes and the onion with a paper towel to remove excess moisture.

Grate the potatoes on the fine, prickly side of a grater. This isn't set in stone — you can use the coarse side, or even the fine side. Grated coarsely, the pancakes come out more distinctly "potato-y"; grated fine, the texture is more uniform. You can also chop the potatoes in a food processor. Then squeeze the liquid out of the potato mixture. Grate the onion as well and squeeze it out, too. Stir the potato and onion together.

Step 3:
Crack the eggs and separate the yolks from the whites. Deruny are often made with whole eggs, whites and all — if you go that route, one egg is enough. If you're using yolks only, take two.

Add the yolks to the potato mixture and stir everything together well.

Peel the garlic, run it through a garlic press, add it to the rest of the ingredients, and stir.

Now add the salt and a small amount of flour. Mix everything thoroughly. Set a large skillet on the stove, pour in the vegetable oil, and heat it up well.

Once the oil is hot, spoon the potato mixture into the skillet using a tablespoon to form the pancakes. Fry them until golden brown, then flip to the other side. Keep the heat at medium.

Fry the pancakes on the second side the same way, until golden. Transfer the finished deruny to a layer of paper towels to soak up the excess oil. Serve them hot with sour cream and fresh herbs. Enjoy!

In Ukraine they're the beloved deruny; in Belarus, draniki; in the Czech Republic, bramboráky; and in Russia they go by different names depending on the region.
