Eggplant Spread with Carrots and Tomatoes for the Winter

Step 1:
To make this delicious eggplant-and-vegetable spread for winter, gather all your ingredients.

Add the grated carrots to a skillet heated with a little vegetable oil and fry, stirring now and then.

Add the onion, cut into half-moons, to a skillet heated with a little vegetable oil and fry until golden, stirring now and then.

Peel the 3 kg (about 6.5 lb) of eggplant and cut them into rough strips.

Spread the sliced eggplant in an even layer on a baking sheet.

Drizzle the eggplant with vegetable oil to taste, season with salt, toss to coat, and put the baking sheet in an oven preheated to 400°F (200°C).

Finely chop the 600 g (about 1.3 lb) of parsley and put it in a large enamel basin.

Take the roasted eggplant out of the oven after about nine minutes.

Add the eggplant to the basin with the chopped parsley.

Spread the next batch of eggplant on the baking sheet, drizzle with vegetable oil, season with salt to taste, toss, and put it in the oven.

Cut the 1 kg (about 2.2 lb) of tomatoes into rough wedges, first soaking them in hot water and slipping off the skins.

Add the chopped tomatoes to a skillet heated with a little vegetable oil and fry, stirring.

Add the fried tomatoes to the basin.

Set the basin of vegetable mixture on the stove and, stirring, bring it to a boil.

Add salt to taste and 2 tablespoons of sugar to the vegetable mixture, stir everything together well, and keep cooking the spread, stirring now and then, for 5 to 7 minutes.

Pour boiling water over the lids you'll use to seal the jars in a bowl.

Pack the sterilized jars tightly with the spread and set the lids on top.

Set a large pot of hot water on the stove, lining the bottom with a kitchen towel.

Place the jars of spread in the pot — the water should come up to the shoulders of the jars — and once it comes to a boil, process the jars for 15 to 20 minutes.
