Homemade Burger with Spicy Crispy Chicken
An incredibly tasty burger with juicy, spicy chicken and fresh veggies. The great thing about homemade burgers is that you can load them up with any fillings you want, in whatever amount you like. These come out every bit as good as anything from a restaurant — really satisfying, and definitely more wholesome than fast food.

Step 1:
Take the chicken breast, rinse it, and pat it dry with paper towels. If you want a neat round patty, set a round cookie cutter — or a bowl of the right diameter — on top of the chicken and cut around it with a sharp knife. Or just slice off a thin piece of chicken; it won't change the taste at all.

Now make the batter for the chicken patty. Take two bowls. In one, put 1 tablespoon of a spicy seasoned breading (the kind used for classic buffalo wings) and gradually whisk in water until you have a smooth batter about the consistency of drinkable yogurt. Put the rest of the breading in the second bowl. Now heat a skillet well with the oil.

Season the patty with salt, dip it in the batter, then coat it thoroughly in the dry breading (a few layers), and lower it right into the hot oil. Fry over medium heat for about 8 minutes, until cooked through and golden. Transfer the finished patty to a paper towel to drain the excess oil.

Next, prep the vegetables for the burger. Wash and dry the lettuce and cucumber. Slice the cucumber lengthwise into thin, long strips. Peel the onion and cut it into thin slivers. Put the onion slivers in a small bowl, add the vinegar, water, and a pinch of sugar. Stir everything together and let the onion marinate for at least 7 minutes.

Step 5:
Make the burger sauce. In a small bowl, combine the mayonnaise with a little kefir — the kefir makes the sauce lighter and smoother. Peel the garlic clove and crush it through a garlic press. Stir everything together.

Next, take a sesame burger bun and slice it in half horizontally. Set your oven to toast (or the broiler), place the bun halves on the rack, and toast for about 3 minutes, until lightly golden.

Now for the best part — building the burger. Set the sesame top aside for the moment. Take the bottom bun, lay down a couple of lettuce leaves, and spread them with the sauce you made. Add the marinated onion slivers on top. Next comes the fried, crispy, juicy chicken patty. Then add the cucumber slices, brushing them with the mayo-kefir sauce as well.

To finish, set the sesame top bun in place.

- It's best to make your own mayonnaise — it tastes better and is better for you. Look for a good homemade mayonnaise recipe. You can also use sour cream or plain yogurt as a dressing instead of mayonnaise, either on their own or mixed with mayonnaise in any ratio you like — that will cut the calories.
- Use filtered or bottled water with a neutral taste. If you use tap water, keep in mind it can leave an off flavor in the dish.
