A quick, tasty dinner for meatless days — just 20 minutes and easy to make. Pan-fried broccoli is one of my all-time favorite dishes.

  • Here's my go-to method for pan-fried broccoli. Break the broccoli into florets and rinse them well under running water. Bring a pot of water to a boil, add a little salt, and cook the broccoli until tender. (If you're using frozen broccoli, cook it according to the package directions.) While the broccoli cooks, beat the egg. Trim the crust off the bread and tear it into small pieces, then dry the pieces in a skillet and grind them in a blender — that gives you plain breadcrumbs. To skip that step, just use store-bought plain breadcrumbs. Dip the cooked broccoli in the beaten egg, then coat it in the breadcrumbs. Fry in a hot skillet with vegetable oil until golden. This pan-fried broccoli makes a great side dish alongside potatoes or buckwheat.
