  • As Albert Einstein put it, everything brilliant is simple. And nothing is simpler than lavash, the classic Armenian flatbread. Lavash is an unleavened white bread made from wheat flour and rolled out paper-thin. It's a clean, low-calorie product that works beautifully in lighter, diet-friendly cooking. The exact origin of the word "lavash" isn't known, but one theory holds that "lav" comes from Arabic for "flat," while "ash" has Turkic roots and means "food." Today there are two main types: Armenian and Georgian, which look quite different. The Armenian version is very thin and perfect for rolling up into wraps, while Georgian lavash is thicker and fluffier, making it great for quick, pizza-style dishes. Armenian lavash is by far the more popular of the two. It's said to have spread around the world alongside Armenian travelers, and these days you'd be hard-pressed to find a place where you can't buy a good one. No wonder lavash dishes are so beloved: you can wrap just about any filling you like inside. In this recipe I'm sharing a budget filling of crab sticks, which is handy not only when you're watching your wallet but also during fasting periods.
