A wonderful zucchini appetizer with garlic sauce, absolutely delicious! Goodness, how zucchini saves the day. It's especially welcome on meatless days. You barely plant them and there they are. When they're young they're perfect for a spread; the older ones are great in any zucchini appetizer. Luckily, there's no shortage of recipes, generously passed along by friends and family. When guests show up out of the blue, I never have to wonder what to make. This appetizer is great for a holiday spread or an everyday dinner alike.

  • The recipe is quite easy, by the way. All you really need is a zucchini and a few other ingredients, plus the desire to feed people something good! So let's make our simple little dish. Slice the zucchini (medium-sized ones are best) into rounds that are neither too thin nor too thick. Salt them and let them sit so the juices draw out. I like to pepper them before dredging the pieces in flour. Dredge the zucchini in flour and fry it in vegetable oil until golden on both sides. Then stir the mayonnaise together with the garlic and spread it over the freshly fried zucchini rounds. Garnish with fresh herbs.
