Pork Medallions with Apples and Cinnamon

    1. Cut the pork tenderloin into even pieces about 1 inch (2–3 cm) thick. 2. In a small dish, mix together the spices: nutmeg, cinnamon, coriander, and ground black pepper. 3. Set the medallions on a cutting board, press each one gently with your fingers to flatten it a bit, and sprinkle both sides with the spice mix. There are three secrets to juicy pork medallions: don't grease the pan, sear over high heat, and don't salt the meat before cooking. 4. Lay the meat on a screaming-hot skillet and sear for no more than 30 seconds per side; that keeps the medallions tender and browned. 5. Transfer the seared medallions to a deep bowl and sprinkle with salt, then start the sauce in the same pan. Slice the onion and apples. 6. Heat the olive oil and sauté the onion and apples until golden. Stir together a quarter cup of apple juice and a teaspoon of apple cider vinegar (or use hard cider), and pour it into the pan. 7. Once the apple sauce thickens, return the seared medallions to the pan, pour in any juices the meat released in the bowl, and stir. 8. Simmer the meat in the apple sauce over the lowest heat for 2 to 3 minutes. Serve the pork medallions on their own, with slices of fresh apple, mint leaves, and the sauce.
