Step 1:
To prepare this dish, you can take ready-made minced meat from a mixture of pork and beef. And you can cook it yourself. To do this, cut pieces of pork and beef, about the same size, into pieces and pass through a meat grinder.
Step 2:
Add salt and ground red pepper (hot) to the finished minced meat. Mix everything very well so that the spices are evenly distributed in the meat.
Step 3:
Then pour mineral, carbonated water into the minced meat. Thanks to its presence, the finished dish will be very juicy. Mix everything until smooth. Tamp it in a bowl and press it with something. You can cover it with a plate, and put a jar of water on top. In this compressed form, put the bowl in the refrigerator for a day.
Step 4:
After a day, prepare onions for meat. To do this, clean it and rinse it in cold water. Slice the onion, trying to make it as small as possible.
Step 5:
Finely chopped onion, add to the marinated meat.
Step 6:
Mix everything very well. Then beat the finished minced meat on the bowl. To do this, simply lift it with your hands and throw it on the bottom of the bowl. Thanks to this procedure, the minced meat will become packed and more plastic, so that it will not fall apart when frying.
Step 7:
To form meat tortillas, lubricate your hands with olive oil, pinch off a little meat mixture and form small round tortillas, about 10-13 cm in diameter. Fry them in hot oil over medium heat for a couple of minutes.
Step 8:
Then turn over and fry on the other side until golden brown. During frying, press them down with a spatula and check which juice is released so as not to miss the desired degree of readiness. Serve the pleskavitsa with a side dish of potatoes or pasta. Also serve with fresh vegetables. You can also make garlic sauce. Bon appetit!
