  • Lamprey is a pretty unusual food that's rightly considered a delicacy. Its flavor is like nothing else — very delicate. One bonus when you clean a lamprey: it has no bones, just a single notochord inside that needs to be removed. It also has no scales to scrape. What it does have is a coating of slime that must be removed completely, and that's trickier than it sounds — the fish is so slippery it keeps sliding out of your hands. Through trial and error, a few effective cleaning methods have turned up. First method: prick the lamprey with a fork near the head and scrub the slime off with a stiff scouring pad. Second method: put the lamprey in the sink and run hot water over it; after 2–3 minutes the slime comes off easily. Third method: spread salt on a piece of dry cloth and drag the lamprey through it — the salt acts like a scrub and strips the slime off very effectively. And that's really all you need to know about prepping and cleaning this unusual fish. 1. First, clean the slime off the lamprey using whichever method above works best for you. 2. Cut off the heads. In more detail: you can cut off just the head and remove the gills separately with kitchen scissors, or cut off the head together with the gills, which end at the seventh and last gill opening. 3. Slit the belly open and pull out the gut and notochord. Wash each lamprey thoroughly, inside and out, under running water. 4. Pour the vegetable oil into a skillet and set it over the heat. Now rub the lamprey with salt and dredge it in flour. 5. Lay it in the hot oil and fry on both sides until an appetizing golden crust forms. Serve with any side dish — it's especially good with mashed potatoes. Enjoy!
