Fresh Plum Pie with Crunchy Nut Brittle
A wonderfully juicy, soft crust and a crisp nut topping! A delicious open-faced fruit pie with a fresh plum filling and walnut brittle over a cottage cheese dough.
Cooking method

Step 1:
DOUGH: In a mixer bowl, combine the cottage cheese, sugar, oil, milk, vanilla sugar, and salt.

Mix everything together.

Step 3:
Gradually add the flour and baking powder, mixing until combined.

Step 4:
Flour your work surface, turn out the dough, and knead it into a soft dough.

Let the dough rest for 10–15 minutes.

Step 6:
Roll the dough out into a round to fit a 9-inch (22 cm) pan.

Step 7:
Grease the pan, lay in the dough, and form a low rim around the edge.

Step 8:
FILLING: Wash the plums and pit them.

Step 9:
Dust the dough with the starch, arrange the plums on top, and sprinkle with vanilla sugar.

NUT BRITTLE: Coarsely chop the walnuts.

Step 11:
Pour the sugar into a skillet and melt it over high heat, stirring, until liquid. Add the butter and nuts.

Cook for 2 minutes, stirring.

Step 13:
Spoon the nut brittle over the plums.

Step 14:
PIE: Bake the pie for 25–30 minutes at 350°F (180°C), until nicely golden.

Let the pie cool completely and serve with tea. Enjoy!
