This pork with mushrooms is quite suitable for a festive table. I have checked the recipe several times, it is one of the most favorite dishes in our family. I cooked it with porcini mushrooms, oyster mushrooms, and honey mushrooms. The recipe says that it is better to take chanterelles or boletus.
To begin with, we thoroughly wash the pork, then cut it across the fibers so that in the end the finished meat pieces turn out soft and tender, melting in the mouth. Pork meat layers are beaten off from both sides, salt and pepper to taste. Now heat the pan and fry the meat until golden brown in vegetable oil. We put the meat aside. Mushrooms, it is better to take either chanterelles or porcini mushrooms, put them to boil in salted water, then drain the water through a colander, let it drain.
Cut onion into half rings and also fry it to a ruddy state in vegetable oil. Add mushrooms to the onion, continue to fry for another seven minutes, stirring constantly.
Now take a baking sheet, coat it with oil, spread a layer of toasted pork. On top we put a roast of mushrooms and onions. All this food is poured with sour cream and put in the oven to fry for twenty or thirty minutes. When the dish is ready, sprinkle it with chopped dill and parsley.
