- This pork with mushrooms is perfect for a holiday table. I've tested this recipe several times — it's one of our family's favorite dishes. I've made it with porcini, oyster mushrooms, and honey mushrooms; the recipe suggests chanterelles or porcini work best. Start by rinsing the pork well, then slice it across the grain so the finished pieces come out soft, tender, and melt-in-your-mouth. Pound the pork slices on both sides and season with salt and pepper to taste. Heat a skillet and brown the meat in vegetable oil until golden, then set it aside. Boil the mushrooms (chanterelles or porcini are best) in salted water, then drain them in a colander and let them dry. Slice the onions into half-rings and sauté them in vegetable oil until golden. Add the mushrooms to the onion and keep cooking for another seven minutes or so, stirring constantly. Now grease a baking dish and lay down a layer of the browned pork. Top with the mushroom-and-onion mixture, pour the sour cream over everything, and bake for twenty to thirty minutes. When the dish is done, sprinkle it with chopped fresh dill and parsley.
