Banitsa
This Bulgarian pastry is the perfect companion to a mug of hot tea! Not long ago, while visiting my mom, I got to try a pastry called banitsa. I liked it so much that I naturally got the full recipe from her and made it at home right away. Now I'll share how to make this treat with you.

Cooking method
- Start by kneading a firm, elastic dough from the ingredients above and let it rest for about 30–40 minutes. Work 1 tbsp of melted butter into the dough.
- Once it has rested, divide the dough into 9 equal pieces. Roll each piece out with a rolling pin into a thin sheet, then let them dry out a little.
- Next, beat the cottage cheese together with the eggs, a little melted honey, 2 tbsp butter, sugar, and salt. Layer the sheets in a baking dish, brushing each first with butter and then with the filling. Put the dish in an oven preheated to 350°F (180°C) for 4–5 minutes.
