- After spending time in Europe, I've come to associate chestnut dishes with Christmas. On the eve of the holiday, the streets there are filled with incredible smells — not just vanilla and spices, but roasted chestnuts, too. They're sold in little bags, in small portions. Here you can buy edible chestnuts and roast them yourself, but for Christmas it's better to turn them into a proper dish. There's one wonderful recipe called "Chestnuts with Brussels Sprouts." It's not only very tasty but also good for you — and it comes together simply and quickly. So, first take a pot and bring water to a boil. Salt it. Then rinse the Brussels sprouts and drop them into the salted boiling water. Let it come back to a boil and cook the sprouts until tender — they should turn soft, which takes about 10 minutes. Lift the sprouts out into a colander and let all the water drain off.
- Meanwhile, set a skillet on the stove. Melt the butter and add the bacon, cut into small squares. Fry it until all the fat has rendered out. Turn the heat up a little and add the chestnuts (already peeled) to the bacon. Toss in a sprig of thyme for aroma. Fry the chestnuts, stirring constantly, for about 5 minutes. Then add the Brussels sprouts, stir everything together, and fry for a few more minutes. Divide the finished dish among plates. Season with salt and pepper on top, then add a little squeeze of lemon juice. Toss right on the plate and serve. Enjoy!
