Liver patties are easy to make, with a tender, pleasant flavor! I like to make chicken liver patties for my family more often in fall and winter than the rest of the year. It's a favorite of mine — inexpensive to put together, yet genuinely satisfying.

  • I have a real soft spot for chicken organ meats. They suit me both on price and on flavor, and you can make all kinds of dishes with them. Here I'd like to share one of my husband's favorite recipes — chicken liver patties. Start by taking 300 grams of chicken liver and rinsing it well under running water. Pat it dry and run it through a meat grinder. Run the peeled onions through the grinder too (or chop them in a blender). Mix the liver and onion together, season with salt and ground pepper to taste, add the herbs (cilantro, basil), and stir in the eggs. The mixture should be fairly thick — if it's too runny, add a little flour. Now you can start frying the patties: cook the mixture in batches in a skillet with hot oil. Once all the patties are done, arrange them on a plate and serve with sour cream.
