  • Among all seafood, squid deserves special attention. You can make all sorts of dishes with it, and it doesn't take long — three minutes is plenty. When you braise it, cream really brings out the flavor. I actually stumbled onto this recipe by chance: on a bench in a little neighborhood park, there was a lone notebook with "Delicious Food" written on the cover and a handful of recipes inside. One of them was squid stuffed with vegetables, and I loved how it turned out. Finely shred the cabbage and dice the smoked bacon. Get the mushrooms, onion, and any boneless white fish ready, chopping the onion small. Heat a skillet and fry the cabbage, onion, fish, and carrot in the rendered bacon fat. Rinse the squid tubes, remove the quill and all the innards. Chop the tomato into small pieces, and do the same with the garlic. Mix them into the fried vegetables, season with spices, and fry for 7 minutes — that's your filling. Stuff the squid with it, arrange the tubes in a braising pan, pour in the cream, add salt, and simmer for 3 minutes after it comes to a boil. Now the "found treasure" is ready. Serve sprinkled with finely chopped green onions.
