  • First, peel the potatoes and boil them until they're almost done. Don't wait for them to cool completely — mash them right away, as you would for mashed potatoes. Melt the butter and stir it in. Along with the butter, add a raw egg and season with salt and both black and red pepper to taste. Mix everything thoroughly. Now shape the potato mixture into balls and dredge them in flour or breadcrumbs. Heat olive or sunflower oil in a deep skillet and fry the potato balls until golden. When they're done, serve them sprinkled with finely chopped fresh herbs and topped with sour cream. You can eat this on its own or as a side dish with meat. Enjoy!
