Boiled Pork Knuckle Roll
A wonderfully tasty pork knuckle for the holiday table! Here's a recipe for a roll made from boiled pork knuckle, with sautéed onion as the filling. The roll makes an excellent addition to a meat platter on the holiday table and a great alternative to store-bought sausages for breakfast. A roll of boiled knuckle is far healthier and more satisfying than factory sausages — and certainly more beautiful. Thinly sliced and pressed, the knuckle with its onion filling is wonderfully appetizing and delicious! Serve it with spicy sauces, fresh vegetables, pickles, and marinades. Enjoy your meal!

Step 1:
Gather the ingredients from the list.

Wash the knuckle well and scrape it clean. Place it in a pot, add some herb stalks and the outer skins of an onion (or a chunk of onion), cover with water, and cook for about 3 hours at a slow simmer, covered. Add salt half an hour before it's done.

Let the knuckle cool in the broth until it's just warm.

In sunflower oil, sauté the coarsely chopped onion until translucent. Season it lightly with salt and pepper, and add some aromatic herbs if you like.

Cut the knuckle down to the bone along one side and remove the long bone entirely. Spread the knuckle out flat.

Spread the sautéed onion over the meat.

Carefully wrap the stuffed knuckle in plastic wrap, rolling it up tightly. Put it in the refrigerator under a weight until fully chilled — preferably overnight.
