Breaded Fried Cauliflower with Egg

A really easy recipe — tasty and quick! When we think of a side dish for meat or poultry, we usually picture buckwheat, rice, pasta, or potatoes. But we tend to forget there are plenty of wholesome, vitamin-rich vegetables that work just as well. That's why I want to share a recipe for fried cauliflower that makes a great companion to any meat main. There are loads of ways to fry cauliflower, and this is one of them.

  • Start with a head of cauliflower: rinse it and pull off the leaves. Break it into small florets, drop them into salted boiling water, and cook for 10–15 minutes. Lift the florets out of the water, let them cool, and break them into even smaller pieces. Beat the eggs with salt and pepper. Mix the breadcrumbs with the chopped herbs you prepared earlier. Dip each floret in the egg, roll it in the breadcrumbs, and set it in a hot, oiled skillet; fry the cauliflower a few minutes until golden brown. Once all the cauliflower is fried, serve it as a side dish for meat or poultry. Enjoy!
