Fried Eggplant with Garlic Mayo
A tasty, filling eggplant appetizer! Eggplant is a wholesome vegetable, packed with vitamins and nutrients like phosphorus, potassium, copper, magnesium, and iron. It's high in fiber, which is good for digestion, supports heart health, helps clear bile from the body, and can help keep blood pressure in check. On top of that, you can make all kinds of delicious dishes from eggplant — and one of the simplest is fried eggplant with garlic and mayonnaise.
Cooking method
-
Step 1:
Get the ingredients ready.
-
Step 2:
Wash the eggplants and remove the stems. Cut them into thin rounds, about 1/4 inch (0.5 cm) thick — fried eggplant should stay pleasantly meaty. Cut them too thin and they turn into a flavorless film; cut them too thick and they won't cook through.
-
Step 3:
Sprinkle the sliced eggplant with salt — it's best to rub both sides by hand. Put the rounds in a bowl and pour in a little cold water. Let the eggplant sit for half an hour. Meanwhile, prep the rest: peel the garlic cloves and finely chop them with a knife or press them through a garlic press.
-
Step 4:
Put a few spoonfuls of mayonnaise in a small bowl, add the chopped garlic, and stir — your eggplant dressing is ready. Heat the vegetable oil in a skillet. Add the eggplant rounds and fry on both sides until lightly golden; just don't dry them out, or they won't taste as good.
-
Step 5:
Transfer the fried eggplant to a plate. If they seem too oily, set the rounds on a paper towel first to let the excess oil soak in, then move them to the plate. Spread a little of the garlic mayo on each round. Sprinkle with fresh herbs and serve the appetizer.
-
Step 6:
This simple eggplant appetizer is easy and quick to make — even a beginner cook can pull it off. Yet for all its simplicity, it's hearty and delicious, if a bit high in calories, so anyone watching their waistline may want to enjoy it in moderation. Serve it as a dish on its own or as an appetizer. It comes out nicely zesty, and fried eggplant is just as good hot or cold. Enjoy!
