Fried Eggplant with Garlic Mayo

    Wash the eggplants and remove the stems. Cut them into thin rounds, about 1/4 inch (0.5 cm) thick — fried eggplant should stay pleasantly meaty. Cut them too thin and they turn into a flavorless film; cut them too thick and they won't cook through.

    Sprinkle the sliced eggplant with salt — it's best to rub both sides by hand. Put the rounds in a bowl and pour in a little cold water. Let the eggplant sit for half an hour.
