My eggplant, remove the stems. Cut the eggplants into thin circles, the thickness of such circles should be about 0.5 centimeters, fried eggplants should be moderately fleshy. If the pieces are thinner, then they will turn into a thin film of eggplant and there will be practically no taste left if they are poorly fried thick.
Step 3:
Sprinkle the chopped eggplants with salt, it is better to rub them with your hands on both sides. Put the eggplant slices in a bowl, pour a little cold water. We leave the eggplants for half an hour. While we prepare the other ingredients. garlic cloves are cleaned from the films. Finely chop the garlic with a knife or pass it through the press.
Step 4:
Put a few spoonfuls of mayonnaise in a bowl, add chopped garlic and mix. The eggplant dressing is ready. Heat the vegetable oil in a frying pan. We spread eggplant circles on it, fry on both sides, until a little ruddy, the main thing is not to over-dry the vegetables, otherwise it will not be very tasty.
Step 5:
We remove the fried eggplant on a dish. If it seems that the vegetables turned out to be too oily, then we put the eggplant circles on a paper napkin beforehand, let the excess oil soak in, and only then put it on a plate. We spread a little mayonnaise dressing on each circle. Sprinkle with fresh herbs. We serve the appetizer to the table.

Such a simple eggplant snack is easy and quick to prepare, even a novice hostess can handle it. But despite its simplicity, it is quite satisfying and tasty, but also high in calories, so it is better not to abuse such a delicacy for those who watch their figure.
