Chinese-Style Sweet-and-Sour Battered Meat

This standout recipe absolutely belongs in your cookbook. Let me introduce you to a dish — Chinese-style beef or pork — that's bound to become a family favorite. The meat turns out surprisingly soft and tender, unlike the meat dishes we usually make. And Chinese food, of course, has always been prized for its flavor.

  • The whole secret to this dish is that the meat first has to marinate. Cut the meat into thin strips, sprinkle with Korean-style seasoning, add a little salt, and stir in the sugar. Then add the soy sauce and a tablespoon of vegetable oil. Mix and refrigerate. Ideally, marinate the meat for at least a full day — that guarantees it comes out tender and soft. A note on the sugar: add it to taste, since not everyone likes a hint of sweetness in meat dishes. Once the meat is marinated, move on to cooking. First make the batter: in a bowl, combine the eggs and flour with a little water, then mix and whisk it smooth. Add the meat to the batter and stir well to coat. Heat the vegetable oil in a skillet, and all that's left is to fry the strips of meat until golden. Turn the pieces now and then so they brown on all sides — it actually cooks very fast. The Chinese-style meat is ready! Serve the crispy strips with any side you like — traditional rice, potatoes, or whatever you prefer. I think you'll really appreciate this recipe.
