Braised Potatoes with Chicken Liver
An inexpensive, quick dish of potatoes and chicken liver. This tasty hot dish can easily stand in for a roast. Potatoes with liver come together fast — especially with chicken liver — making it an ideal dinner.

Step 1:
Gather the ingredients on the list. Peel the potatoes, carrots, and onions, and rinse the chicken liver.

Cut the chicken liver into small pieces.

Pour vegetable oil into a heavy-bottomed pot, heat it up, and add the liver. Sauté the liver pieces over medium heat, stirring, for two minutes.

Meanwhile, cut the onion into quarter-moons.

Add the chopped onion to the pot with the liver, stir, and cook for another five minutes over medium heat.

While the liver and onion cook, cut the carrot into small dice.

Then add the diced carrot to the pot, season with salt and spices, and stir. Keep cooking for another 5 minutes.

Next, cut the potatoes into large cubes.

Pour the broth over the potatoes and liver in the pot and add a bay leaf.

Gently stir all the ingredients together, bring to a boil, reduce the heat, and cover the pot. Braise for 20 minutes.

Toward the end of braising, finely chop the fresh herbs.

Add the chopped herbs to the pot and stir.
