Braised Rabbit in a Slow Cooker
A simple, delicious, and wholesome dish with no fuss! Rabbit is a lean, hypoallergenic, and nutritious meat — so much so that it's one of the first meats introduced to babies. There's a whole world of tasty dishes you can make with rabbit. A slow cooker makes life easier, letting you turn out satisfying, flavorful meals with very little time and effort, and this braised rabbit is a perfect example. There's nothing tricky about it, just a handful of ingredients, yet you end up with a delicious, wholesome dish you can serve with any side or fresh vegetables.

Step 1:
Gather your ingredients. It's best to cut the rabbit into parts — since there isn't a lot of meat on a rabbit, you can cut it up bone-in. Rinse the meat thoroughly under running water and let it drain. Peel the onion and cut it into dice.

Wash and peel the carrot and grate it on the medium holes of a box grater. The carrot is optional, but it lends a pleasant sweetness to the meat.

Pour a little vegetable oil into the slow cooker pot — for an even healthier, tastier dish, you can use olive oil instead. Set the "Sauté" program for 10 minutes. Once the oil is hot, add the prepared onion and carrot. Stir the vegetables with a wooden or silicone spatula and sauté them, uncovered, until soft.

Add the rabbit to the sautéed vegetables. Season with salt and ground black pepper to taste. Stir and sauté about 10 minutes, uncovered — the meat should turn lightly pale. Stir in a couple of tablespoons of sour cream and a little water; about a quarter cup is enough, just so the bottom of the pot doesn't go dry and the contents don't scorch.

Step 5:
Set the "Stew" program for 30 minutes and close the lid. After about 15 minutes, check on the dish and top up the liquid if needed. The dish is done.

Serve the braised rabbit with any side you like — mashed potatoes, pasta, and grains all work well. It comes out really tasty, juicy, and wholesome. Enjoy!
