Hare Braised in Sour Cream
A superb dish for the most discerning cooks! Easy to make, delicious, tender hare steeped in a sour cream sauce. It'll dress up any holiday table and wow your guests, since this is meat not everyone has had the chance to try.

Peel the onions and cut them into large pieces.

Cut the hare into several large pieces (saddle, hind legs, shoulders), trim off the silverskin, rinse, and pat dry with paper towels.

Put the meat in a deep bowl. For the marinade, mix the vinegar with cold water. Pour it over the hare and let it marinate for 2–3 hours in a cool spot — the refrigerator works well.

Then lift the hare pieces out of the marinade, pat them dry with a kitchen towel, and arrange them on a baking sheet. Season with salt, scatter over the pre-cut parsley root and onion, drizzle with oil, and roast in a preheated oven until a nice golden-brown crust forms. As it roasts, baste the pieces now and then with the juices the meat releases.

Transfer the roasted hare to a braising pan. Stir the roasting juices into the sour cream and pour this mixture over the meat. Then braise, covered, for about 25–30 minutes in the oven. As you can see, you don't have to be a hunter to know how to make hare braised in sour cream — any home cook can pull it off!
