Rice with Chicken in a Slow Cooker
Simple, fast, and really tasty—so easy to make! Rice with chicken in a slow cooker is like a stripped-down risotto. It cooks evenly with no need to babysit the pot! A slow cooker is a busy cook's best friend.

Step 1:
How do you make rice with chicken in a slow cooker? Gather the ingredients. You can use any part of the chicken, or cut up a whole bird. Use long-grain rice, since it holds its shape better and doesn't turn mushy.

Cut the chicken into small pieces. Peel the onion and carrot, rinse them, and cut them up. You can slice or coarsely grate the carrot; just chop the onion fine.

Set the slow cooker to "Sauté" and add a little vegetable oil. Add the onion and carrot to the hot pot and cook the vegetables for a couple of minutes.

Then add the chopped chicken. Stir and cook it with the vegetables for 10–15 minutes, stirring now and then so nothing scorches.

Meanwhile, rinse the rice several times in cold water, then drain off all the excess.

Add the rinsed rice to the slow cooker pot and pour in hot water. Season with a little salt and spices to taste. Why hot water? Sudden temperature swings aren't good for the pot, and they don't do the hot meat any favors either. Plus it saves time—the slow cooker doesn't have to heat cold water.

Set the pot back in the slow cooker, close the lid, and start the "Grains" (or pilaf) program for 25 minutes. When it beeps, the dish is done. Let the rice rest under the lid for another 10–15 minutes. Fine-tune the timing to your own machine!

The rice with chicken is ready! Spoon it onto plates and serve. Enjoy!
