Cooking method
The taste of this pie is very delicate due to the use of Greek feta cheese. And the addition of spinach makes this dish extremely useful.
This pie is prepared as follows:
1. Thoroughly wash the spinach under running water, dry it.Heat a large frying pan and put clean dry spinach leaves on it, if necessary, flatten them. Add salt and pepper to taste and cover the pan with a lid. Simmer the spinach over medium heat for 5 minutes, stirring occasionally.
2. Throw the finished spinach into a colander and drain the unnecessary liquid, for this you can slightly suppress the spinach with a spoon. Then put it back in the pan and dry it there.
3. In a pan with spinach, pour a pinch of nutmeg and lemon zest. Warm them up a little and turn off the pan until completely cooled. Cut the feta cheese into cubes. After the pan has cooled down, beat in the egg, pour out the cheese, add salt and pepper to taste and mix everything well.
4. Next, you will need puff pastry. It must be thawed beforehand. Roll out the dough.
5. Place the prepared filling with spinach and feta cheese along one of the edges of the dough. Carefully roll the dough into a roll, while you need to make sure that the thin layers of dough do not break. To do this, you can put a thin, clean kitchen towel under the dough and use it to carefully wrap the dough into a roll. The resulting roll is twisted into a spiral and put on parchment.
6. Add the yolk to the remaining melted butter and smear the top of the pie with this. Sprinkle sesame seeds on top and place in a preheated oven to 175 degrees.
7. Bake the pie for 30 minutes until a golden brown crust appears.
